Txakolina, a wine poured out of a porron with pomp in pinxtos bars in Spain accompanies these delightful bites with its slightly effervescent nature. Muscadet from the Loire Valley with its crushed oyster shell minerality and citrus aromatics cannot be beat as a pairing for seafood, while Vinho Verde is a restrained yet fresher version of Sauvignon Blanc.
